Homemade Quince Compote Recipe | La Forge de Diogne

Velvety Quince Compote recipe – A Star of Autumn Breakfasts at La Forge de Diogne

In the heart of Valais, La Forge de Diogne charms guests with its authentic character and the creativity of its owner, Francine. Among her homemade specialities, her velvety quince compote is a particular favourite. Made with fruit from the garden orchard, it delights with its silky-smooth texture and warm, delicate fragrance. Every spoonful reflects the love of good food and the creative spirit that make this charming guesthouse so special.

Ingredients for 4 pots (250gr)

  • 1.2 kg of unpeeled quince flesh

  • 300 ml water

  • 100 ml apple juice

  • Juice of ½ lemon

Preparation

Wash and rub the quinces thoroughly (do not peel). Cut into quarters, remove the stems, blossom ends and cores, then cut into large cubes.

Cook with the water and lemon juice over medium heat for 30 minutes, until the quinces are very tender.

Once the quinces are tender, add the apple juice and blend until smooth. Store as you normally would.

Notes

Optional sweeteners, according to taste: brown sugar, maple syrup, quince jelly, apple jelly, elderflower jelly…

Personally, I prefer to leave it unsweetened and add a touch of sweetness depending on my mood that day.

Serving suggestions

Enjoy this delicious quince compote in a variety of ways:

  • Spoon it over natural yoghurt, topped with a crumble of toasted hazelnuts and a drizzle of maple syrup.

  • Serve it alongside freshly made crêpes.

  • Pair it with a mild cheese or a homemade pastry.

  • Add a spoonful to a rich game sauce for a delicate, fruity touch.
